The aim of this course is to examine the role of nutrition in achieving and maintaining positive eating behaviors that are consistent with a healthy lifestyle.  The interrelationships between social and economic factors, technological innovations that have contributed to the variety of foods available in the twentieth century and their impact on health are explored.  Interactive techniques such as maintaining food records and assessing body weight are promoted as tools to encourage students to develop healthy eating and exercise patterns.
